15 Min Breakfast Cookies

Looking for a quick breakfast idea your baby/toddler will love?


This morning, I wanted to create something quick, fun, and nutritious for our toddler. And these cookies turned out even better than expected ;) So I am sharing the recipe with you.


RECIPE:

AGE | 10+ months

SERVINGS | about 10 cookies


INGREDIENTS

1/2 zucchini

1/2 ripe banana

1 egg

1 cup oats (I use gluten-free, old fashion)

1/4 cup coconut oil or butter

1 pinch of cinnamon

1 tbsp chia seeds

1 tsp nut butter


PREPARATION

1. Preheat oven to 350 F (180C)

2. Grate 1/2 zucchini (squeeze out the juice, I use my hands to do so)

3. Add 1 cup of oats, 1 egg, 1/2 banana, grated/drained zucchini, 1 tbsp chia seeds, 1 tsp nut butter (I used almond butter), 1/4 cup (55g) of melted coconut oil or butter, a pinch of cinnamon into a bowl

4. Stir all ingredients until well combined.

5. Spoon the mixture on a tray with parchment paper (about 1 tbsp)

6. Bake for 15 minutes
