Banana Nut Butter Sandwich Bites

I love new breakfast ideas for our family, mainly because our toddler gets bored from serving the same foods too often in a row. And a grumpy, hungry toddler in the morning is no fun! These banana bits are not Balbina's favorite breakfast yet (so I end up eating most of them for now, and the pregnant me is not mad about it). But I already know I at least have to serve something new about 5 times until she can tell if she likes it. (It can take 10 to 15 exposures to get a child to enjoy a new food.)
These banana pancake bites are delicious, quick to make, and fun. Banana pancake bites are banana-stuffed bite-sized pancakes made with slices of banana nut butter sandwiches dipped in pancake batter.
RECIPE
AGE | 8+ months (when baby has already been introduced to the nut butter you are using and eggs)
INGREDIENTS:
1/2 cup oats
1/3 cup almond milk (or any milk of choice)
1 egg
1 tsp chia seeds
1 pinch of cinnamon
1 ripe banana
nut butter (I like using almond butter)
PREPARATION:
Pancakes Batter
1. Add oats, almond milk, and egg into a food processor and blend
2. Add batter in a bowl and stir in chia seeds and cinnamon.
3. Let the batter rest for about 5 minutes
Cooking the banana pancake bites
1. Cut the bananas into slices
2. Spread nut butter on a banana slice and top with another banana slice to make a little banana nut butter sandwich.
3. One at a time, dip the banana nut butter sandwich into the pancake batter, coating all over, and place on a frying skillet over medium heat (I like to use ghee as cooking oil)
4. Cook for 1-2 minutes on each side or until golden.
5. I like to serve it with berries or drizzle a little honey over them (NO honey for kids under 12 months)

Note for optional health: I recommend gluten-free, soaked, and soured oats - for young babies if possible. When choosing milk alternatives, always check the label for unnecessary additives, added sugar, or highly inflammatory seeds/vegetable oils. If possible, use pasture-raised egg nut butter., organic banana, and organic nut butter.
