Carrot Cake Bliss Balls

AGE | 10+ months

SERVING | 20-24 balls


INGREDIENTS

1 cup grated carrots

1/2 cup walnuts

2 tbsp flaxseed meal

2/3 desiccated unsweetened coconut

1 cup oats (I used rolled oats, gluten-free)

1/4 tsp ground ginger

2 tsp cinnamon

1/4 cup pitted dates

1/4 cup almond butter

1 tsp vanilla (no alcohol included)

2 tbsp coconut oil


PREPERATION:

  1. Blend the carrots in a food processor until fully grated

  2. Add all other ingredients to food processor and blend until ingredients begin to stick together

  3. Roll into balls and coat in shredded coconut

  4. Keep in the fridge for up to 5 days (great to freeze for up to 3 months)
