10 Min Easy Breakfast Idea - Great for Babies & Toddlers

RECIPE
AGE | 9 months
SERVINGS | 8 small muffins
INGREDIENTS
- 1 cup (90g) desiccated unsweetened coconut
- 2 eggs
- 1/2 tsp cinnamon
- 1 tsp vanilla extract (make sure it contains no alcohol)
- 1 tsp honey (optional - only for baby older than 12 months!)
- Full-fat greek yogurt
- Berries (make sure to offer appropriate for baby (e.g. squish blueberries)
PREPARATION:
- Preheat oven to 350 F (180 C)
- Scramble eggs and stir in desiccated coconut until well combined
- Add vanilla, cinnamon, and honey (optional) to the egg/coconut mixture and combine
- Portion batter into the muffin tin
- Bake for 10 min until gold brown
- Let cool down, then top with full-fat greek yogurt and berries
These muffins are great to freeze or make the night before, and add the topping in the morning. As they are so quick to make, I like to get my toddler to help and make them together in the morning. The muffins (without the topping) are also a great snack to take with you.
