RECIPE

AGE | 10+ months (when baby has already been introduced to almonds, eggs and is chewing better)

INGREDIENTS:

1 lb (450g) chicken breast (organic if possible)

1 big egg (pasture raised if possible)

1 cup (100g) almond flour

1/2 (50g) cup shredded coconut (unsweetened)

1 garlic clove

1/2 tsp salt (when baby is 12+ months)

1/4 tsp pepper

ghee

PREPARATION:

  1. Preheat oven to 400 F (200 C)

  2. Crack egg into a bowl and scramble

  3. Chop garlic into small pieces and mix almond flour, shredded coconut, garlic, salt, and pepper in a bowl.

  4. Cut chicken into strips (or nuggets for older kids)

  5. Grab a chicken tender and dip it into the egg (coat the entire chicken tender). Then, dip chicken tender into the dry ingredients mixture until thoroughly coated.

  6. Melt some ghee on a baking tray, place chicken tenders on it (or use parchment paper), and drizzle some more melted ghee on each chicken tender. You can also use a steel wire rack instead of the baking tray for an extra crispy version.

  7. Bake chicken tenders for 30 min and flip after 15 min (drizzle a little more ghee when flipping the chicken tenders). When chicken tenders are golden brown and crispy, then they are done.

ENJOY these juicy chicken tenders :)
