Mango Pudding

Before sharing the recipe, I want to write about why I really like this mango pudding recipe for babies and your whole family.

It contains gelatin and coconut cream, which are 2 of my favorite foods to incorporate in babies' meals (and I still use them all the time when cooking for my toddler).

Gelatin, which contains collagen, supports tissue repair and the intestinal wall (helping to seal and strengthen the protective lining), reducing food sensitivity risk. And overall, collagen supports the digestive function and immune system.

Coconut cream is full of healthy fats that help the gut to be healthy and high in minerals, vitamins, fiber, and amino acids. It is an excellent source of lauric acid (similar to the composition of breastmilk), which helps against viruses and harmful bacteria. I also like to add coconut cream to any smoothies or purees.

This mango pudding or any gelatin gummies are great first foods for babies (just cut the pudding in finger-sized pieces - ensure you can easily squish the pudding/gummies between your index finger and thumb) and a fantastic snack for toddlers (and me).

RECIPE


AGE | 6+ months


INGREDIENTS

1 cup of mango (when using frozen mango, make sure to thaw)

1/2 cup of coconut cream

1/4 cup cold water

2 tsp grass-fed gelatin

PREPARATION

  1. Add gelatin and water in a bowl and stir until well combined; let it sit for a little bit until 'bloomed'

  2. Add the mango and coconut cream to a food processer and blend until smooth

  3. Heat the mango coconut cream sauce in a saucepan on medium heat

  4. Add heated sauce to the bowl with gelatin and stir until well combined

  5. Add the sauce to the containers you want to use for the pudding (for babies, I would recommend a rectangle-shaped container you fill up about 1/2 inch)

  6. Place containers with pudding sauce into the fridge for at least 2 hours

  7. For baby, cut the mango pudding in finger size shape before offering. For toddlers and your whole family, sprinkle some coconut flakes and top with some mango (optional).
