Sardine Quinoa Fritters

Nutrient-dense fritters for the whole family.

Just a few insights on one of my favorite foods for babies - Sardines. They are high in omega-3 fatty acids and essential for babies' brain development; they are also high in protein, vitamin D, and calcium for healthy bone development. (don't be afraid of the little bones, they are soft and can be crushed easily).
RECIPE
Age | 8+ months
Servings | about 10 fritters
INGREDIENTS
1 can drain sardines
1 cup grated zucchini (squeeze out the juice, I use my clean hands to do so)
2 eggs
1 cup of cooked quinoa
2 tbsp finely chopped basil
1 tbsp ghee or coconut oil for frying
1/2 lemon juice
Pinch of salt (if served for the whole family)
PREPARATION
1. Crack the eggs and whisk well in a bowl
2. Add grated zucchini, cooked quinoa, and basil to a bowl and stir until well combined
2. Mash the drained sardines with a fork and add to the mixture; stir again until well combined
3. Preheat a frying pan over medium heat and add the ghee or coconut oil. Spoon the mixture into the frying pan (about 1.5 tbsp per fritter). Fry on both sides until gold brown
4. Squeeze lemon juice to serve.
